Cinco de Mayo!

Get the Cuervo & Patron ready! :)  Que rico… a yummy  Margarita on the rocks sounds delish! It is time to celebrate Cinco de Mayo a day we all become proud Mexicans. Give us an excuse to eat yummy tacos and enchiladas along with some Coronas or Margaritas and we are all over it! :) Does anyone really know why we celebrate Cinco de Mayo? Ironically enough we probably celebrate it more than the Mexicans even do, aside from Puebla of course. On May 5, 1862 the Mexican Army was victorious over the French at the Battle at Puebla. The day commemorates that victory by the proud Mexican underdogs.  A great celebration indeed. So go out and enjoy with moderation. :) If your cooking at home grab some lean ground beef and make yourself a nice “Picadillo a la Truji” The recipe is in my book or drop me a line and I’ll provide.  Whole grain tacos and tortillas are available at the market, low fat sour cream, and low fat cheese as well. Salsa & Guacamole are great for you and a definite must on this day! Ceviche, YES Mexicans eat healthy fish too :)  Grilled Chicken Fajitas are also yummy and when made right could be very healthy as well. My friends, the kitchen can be our friend when you allow yourself to enjoy it and think outside the box. Substituting the non-healthy ingredients with the healthy ones is the right thing to do, and furthermore I assure you the taste will not be compromised.  I am the first to tell you I did not like to cook, only because I felt like I did not know how. I grew up surrounded by the gift my father and sister had in the kitchen whipping up dishes without even thinking. Unfortunately, yet fortunately, my Dad left me a gift when he passed-the joy of cooking. Today I connect with him when I cook and love every minute of it! I’ve provided you all with a yummy treat today…My Yummy Guacamole Recipe! Buen Aprovecho!

My Yummy Guacamole: Remember you don’t have to eat w/chips…enjoy with my fav Barbara Wheatines Crackers, Sliced Peppers, Celery sticks, Whole Grain Pita…think outside the box!

  • 3 Ripe Haas Avocado peeled and mashed
  • one garlic crushed ( cheat with me and buy jarred minced garlic)
  • 1 diced tomato
  • 1 med chopped red onion
  • 1/2 cup chopped cilantro
  • 1 tbs lime juice
  • 1 tbs chopped jalapeno ~ again cheat w/jarred :)
  • salt & pepper to taste

Mix all together & serve! Let me tell you a secret….keep the seed of the avocado in the mixture to avoid browning! :)
